These deliciously sweet and sticky coconut tarts are incredibly easy to whip up with store-bought sweet tart cases. Perfect with a cup of tea!
Sweet tart cases x 35 (Store-bought - 5cm diameter)
2.5 cup Hello Pure Desiccated Coconut (200 g)
2 tbsp all-purpose flour (16 g)
1 tsp baking powder
0.67 cup sugar (130 g)
0.5 cup milk (120 ml), room temperature
2 eggs, room temperature
2 tsp vanilla extract
4 tbsp butter (60 g), melted
Pinch of salt
Raspberry jam
In a large bowl, mix in the dry ingredients
Add milk, then eggs one at a time until combined
Add melted butter and place in a piping bag.
Place a teaspoon of raspberry jam in the bottom of each tart case and then top with coconut mixture.
Bake @190 °C for 10-15 minutes till golden
