Loved in India and Sri Lanka, this refreshing drink is perfect for beating the heat with fresh tropical flavours, while providing sustenance.
3 ripe mangoes (flesh) (or 2 cups frozen mango)
1/3 cup Greek-style yoghurt (Vegan option: Coconut yogurt)
2 cups Hello Pure coconut milk
1 tablespoon sugar, or 1 teaspoon salt(depending whether you like your lassi sweet or salty)
Juice of 1 lime
Ice to serve
Add the mango, yoghurt, coconut milk and sugar or salt to a blender.
Pulse, then blend for 2 minutes, until the mixture is thick but runny.
Adjust the sweetness or saltiness to taste.
Add a squeeze of lime juice and blitz again.
Add some ice cubes or crushed ice to two glasses.
Pour in the lassi mixture and serve.
